Hi,
I would like to programmatically manipulate the function associated with a data source of a series - as in smooth moving average etc. I can't see a way of doing this so far in the documentation - could you either describe to me how to do this or point me to somewhere that can?

I would like suggest you take a look in the Tutorial 7 - Working with Functions. The tutorial can guide you to create a Function without problems with Teechart Pro VCL/FMX
Also, you find some examples as Moving Average or Smoothed Moving average in the TeeChart Pro VCL demo project, specifically, All features->Financial->Moving Average and All features->Financial->Smoothed Moving average
